Recently, we overworked our humble little blender and it quit on us. We asked it to make too may shakes, smoothies and cold-coffee drinks. 26 Yummy Cookies and Bars for the Holidays!

It's time to start baking for the holidays! I enjoy baking pies, breads and other delicious treats in the fall, but in the winter it's all about cookies and bars! This year, we'll be testing a few new recipes and making our the traditional sugar and chocolate chip cookies. We'll also be making our house favorite, buckeyes! They aren't cookies or bars, but they are oh so yummy!

When the kids were younger, they weren't big fans of gingerbread. It was a bit too 'spicy' for them. I'm hoping that this year, their tastes will have change enough to enjoy these delicious and beautiful gingerbread cut out cookies!



For Dan, I think he may enjoy the Italian Christmas cookies. They look so light and sweet!

I love sugar cookies. A lot. I can't pass them up and I'm so disappointed when they aren't yummy. I have a difficult time getting them as sweet and soft as I want. So I'm going to try this recipe for Buttery Cut-Out Sugar Cookies W/ Icing That Hardens. The kids will enjoy making these as they love anything they get to shape. We have around 200 cookie cutters and this turns into an all afternoon project. So much fun!



I'm deciding whether or not I want to make the Caramel Cookie Cheesecake Bars and take them to the family Christmas party. They look so good, but I'm not sure I really want to share them. Though, it is always fun having bringing the dessert that disappears the quickest, isn't it?

Colorful Bow Tie Pork - Delicious!

Standing by my side as I monitored the skillet and put the finishing touches on dinner, Joey grinned and then took off sprinting through the house.  I found out later that he had rushed to Dan to let him know that dinner smelled "So good!!"  I'd love to take the credit - but the Smithfield® Peppercorn & Garlic Pork was the reason for his excitement.

I do love seeing him get so excited about dinner!  He's so funny.  But I was also excited about this meal.  I found a fun and colorful recipe for Colorful Bow Tie Pork on foodlion.com that helped to brighten our weekly meal plan.  I love planning our family meal time - but admittedly, we can get into a routine of having the same meals week after week.  This was a nice addition to our list of favorites.  It was also a quick and easy meal to prepare.  Prep time was only about 15 minutes and was ready to serve at around 20 minutes. 

We typically enjoy any meal that includes pasta but I often have a difficult time including vegetables in with our pasta dishes.  I also never think to use pork with our pasta - so this was a nice change! 

Colorful Bow Tie Pork

Ingredients:

  • 1 Smithfield® Peppercorn Seasoned Boneless Sirloin Roast, cut into 3/4-inch cubes
  • 1½ teaspoons minced garlic
  • 2½ cups chopped fresh broccoli
  • 1½ cups sliced carrots
  • 1¼ cups milk
  • 2 tablespoons margarine
  • ¼ teaspoon black pepper
  • ¼ teaspoon Italian seasoning
  • ½ cup mozzarella cheese
  • ¼ cup freshly grated Parmesan cheese
  • 1 large tomato, diced
  • 2 green onions, finely chopped
  • 12 oz. bow tie pasta, cooked

Breakfast for Dinner - Fall/Winter Meal Planning

We are back into our Fall/Homeschool schedule. This means, that our meals are very much scheduled. I plan our meals weekly and keep a calendar in the kitchen that lets the family know what they can expect for that week. This helps the grocery shopping time to be spent more efficiently and helps my day to run much more smoothly.

It's also a great help for Savannah and Joe - they do well when they can see what snacks and meals are coming up. They love to give suggestions and ask that their favorite foods be added to the lineup.

As we near the Fall and Winter months - I love to add dinners that are more like breakfast. I love sausage, bacon and eggs - and enjoy using them in our dinner meals. I've collected several recipes on Foodie.com that I plan to use over the next few months as I schedule "Breakfast for Dinner" once a week.

I love everything about this time of the year. I love the lights, parties, gift exchanges, anticipation, stories and most of all - I enjoy the food! It seems as if everyone I know has a special dish that they create during this special season.

My holiday baking list is seemingly a mile long. It never appears that way when Savannah and I set out to complete our baking. However, by the fifth batch of cookies, we're ready to sit on the couch and enjoy a few cookies, buckeyes and chocolate cherry bars.

Though we have a lot treats to choose from - we seem to favor chocolate chips cookies. Savannah and I make several batches of them and change the recipe a bit for each. Some are made with white chocolate chips and others are a combination of peanut butter chips with chocolate chips. The kids love to make one large, gingerbread man, chocolate chip cookie! I love it. It reminds me of the large chocolate chip cookies my college roommate and I would get at the mall.



Chocolate Chips Cookies:


Ingredients


:: 3/4 cup granulated sugar

:: 3/4 cup packed brown sugar

:: 1 cup softened butter (Use butter not margarine! Your cookies will bake much better.)

:: 1 teaspoon vanilla extract

:: 1 teaspoon almond extract (I began adding this a few years ago - love it!)

:: 1 egg

:: 2 1/4 cups all-purpose flour

:: 1 teaspoon baking soda

:: 1/2 teaspoon salt

:: 1 cup coarsely chopped nuts

:: 1 package of chips - your choice! (I switch between using semisweet, milk chocolate, white chocolate, peanut butter chips and your choice of nuts. For the white chocolate chip cookies - I do not add cocoa powder to the dough.)


Mix and Bake!


:: Preheat oven to 375ºF

:: Combine white sugar, brown sugar, softened butter, vanilla and egg.

:: Stir in flour, baking soda and salt.

:: Fold in chips and nuts.

:: Place parchment paper on cookie sheet.

:: Drop dough onto cookie sheet. I use a tablespoon to measure each cookie and round them off.

:: Bake cookies 8 to 10 minutes. I bake for 9 minutes.

Hot Chocolate is a big part of our Winter.  We make it after playing in the snow.  We take it with us when we go out to look at the pretty lights and decorations.  We sip it as we sit and enjoy the soft light of our Christmas tree in the evening.


We love making different variations of the drink and use whipped cream along with every type of marshmallow we can find.  Savannah and Joey love the multicolored and the snowman shaped marshmallows.  I love adding a peppermint stick to my hot chocolate.

There are so many ways to make and enjoy a cup of hot chocolate.  Milk Unleashed has a lot of ideas that I had never imagined!  Check out the ideas below - especially number two!!


1. Add marshmallows as you’re heating the chocolate milk and let them totally dissolve for a thick, gooey treat. Float a few more on top.

2. Still have Halloween candy hanging around? Drop a mini bar (one without nuts) and let it melt into deliciousness.

3. Cinnamon sticks are always handy this time of year. Infuse your hot chocolate with a stick or two.

4. Kids like hazelnut almost as much as peanut butter. Stir in a spoonful of the chocolate-hazelnut spread.

5. Try the un-chocolate hot milk. Just warm some milk and flavor with honey and cinnamon.

6. Puree a half banana for each cup and stir into the hot chocolate. Garnish with a bit of whipped cream and banana chip.

7. Stir in a peppermint stick for a classic, holiday flavor. Then rim the mug with crushed peppermints.

8. While adults are drinking hot toddies…make hot toffees for the kids…stir some butterscotch chips into hot milk.

I love this tradition of hot chocolate during the holidays.  I have so many great memories already.  I hope Savannah and Joe have sweet memories from this sweet treat!

Happy Thanksgiving - Apple Pie

Every Fall, I love to browse blogs and recipe sites for new holiday dishes. Each year, Savannah and I try a new cookie, cake, bread or the latest dessert fad to throw into our holiday baking. This year, even though we hadn't enjoyed Oreo Truffles - we decided to try making them ourselves. They were so fun and easy to create!

Having managed to drop my food processor down the basement stairs - we were left to crush the Oreos by hand. After the crushed Oreos were mixed with cream cheese, rolled into balls and dipped in chocolate. We finally had our new dessert for Holiday Baking 2013. However, we still didn't enjoy them very much.

Except for Joey. He very much loves sweet, chocolate anything. He's already requesting more. We'll see about that.
The rest of us will stick to the peanut-buttery goodness of Buckeyes.

Out of all the treats, cookies and pies - my mother-in-law's apple pie remains my favorite. As hard as I try, I can never make it as perfect as she does. Every year, I try. Though I just can't get the topping quite right. Everything she makes is always wonderful - but I very much look forward to having her apple pie on Thanksgiving.



Apple Pie


Pie Crust:

2 1/4 cups flour
3/4 tsp salt
3 tbsp milk
3 tbsp sugar
3/4 cup oil

Mix in pie plate with fork until crumbly, Press into shape. Prick bottom.

Apple Pie Filling:

7 cups of pared, peeled, and sliced Granny Smith apples
1 1/4 cups sugar
3 tbsp flour
1 tsp cinnamon
1 tbsp lemon juice
2 tbsp butter or margarine

Combine all ingredients except butter and mix. Pour into pastry-lined pie pan. Dot with butter. Put topping on top and bake at 425 for about 45 min. Don't let the topping get too brown.

Streusel Topping

1 cup flour
1/2 cup firmly packed brown sugar
1/2 tsp cinnamon
1/2 cup butter or margarine

In mixing bowl, combine flour, brown sugar and cinnamon. Cut in butter until crumbly. Sprinkle over fruit filling.

How to Cook a Healthy Pizza That Your Kids Won't Know Is Healthy


It's not often you see the words "healthy" and "pizza" used in the same sentence. As you're well aware of, pizza is a ridiculously healthy yet notoriously unhealthy food choice for you and your family.

The Chicago Classic Individual Size Deep Dish Pizza at Pizzeria Uno has over a day's worth of calories for most folks (2,300), and over two day's worth of fat (164 grams) and sodium (4,910 milligrams).

If you want to make smarter, healthier food choices for your family but still want a great-tasting, crowd-pleasing pizza, I've got just the recipe for you.


How to Make a Healthy Pizza 


There are several simple tips you can use to turn an unhealthy pizza into a healthy one:

1. Opt for a whole grain thin crust.

Buy a whole wheat or whole grain crust instead of a white one. And if you can find a thin whole wheat crust, that's even better because it'll save you additional calories.

2. Use lots of veggies.

If you have kids that will frown upon this, hide the veggies under the cheese or blend some spinach and onions together with your tomato sauce and they won't even know.

3. Use lean meats.

Pepperoni, sausage and bacon may be delicious, but they add lots of calories, salt, and fat to your pizza. So go with chicken or ham instead to please the carnivores in your clan.

4. Pick up a low-sodium tomato or marinara sauce.

Pizza contains a lot of salt, but you can cut back on that sodium content drastically by buying a low sodium tomato sauce.

5. Grab a bag of reduced fat cheese.

This will help you cut back on the calories and fat. You still want some fat though for flavor, so stay away from the fat free dairy products.

So now that you're equipped with the tips you need to succeed, let's show you how to make your soon-to-be-delicious pizza.


Healthy Chicken Supreme Pizza Recipe


Ingredients:
• 1 Whole Wheat Pizza Crust
• 4 oz. Boneless, Skinless Chicken Breast
• 1 Tomato
• 1 Cup Spinach
• 1/2 Onion
• 1/2 Green Pepper
• 1/2 cup Reduced Fat Shredded Mozarella Cheese
• 1/2 cup Low Sodium Tomato Sauce
• Salt and Pepper

Instructions:
1. Heat a pan to medium heat and spray with cooking spray. Cook chicken breast for 5-6 minutes.Flip chicken breast and cook for another 5 minutes. Remove from heat and season with salt and pepper.
2. Chop the onion and green pepper and saute in the same pan with the spinach for about 5 minutes.
3. Spread tomato sauce over the crust. Top with onion, green pepper, spinach, and diced tomato.
4. Cut chicken into half-inch cubes and spread evenly over pizza.
5. Top pizza with mozarella cheese.
6. Cook for 8-10 minutes at 400 (or according to the instructions on the crust package). Let cool, cut pizza into 8 slices and serve.
Nutrition Facts (per 2 slices):
303 calories, 9 g fat, 37 g carbs (7.5 g fiber), 19 g protein, 488 mg sodium

We Like Toast! French Toast!

Joey loves anything that involves syrup.  I'm also pretty sure that breakfast is his favorite meal. Though he loves waffles (he made sure I bought myself a waffle iron for Mother's Day), I think that French Toast is his favorite breakfast food. The bigger the better and serve with butter!  I love making French Toast for the kids!

Though I really enjoy preparing meals that my family likes - I especially love making French Toast for my kids.  Making this brings back memories of my Grandfather.  My 'papa' helped me to mix, dip and cook French Toast one morning after I had stayed the night with him and Grandma.  I may have helped my mother make it before that day - but that memory with him sticks out.  I also remember that after breakfast, we washed and cleaned out his car.

  
























:: 1 loaf of bread (I use Texas Toast and let it sit for a week before use)
:: 6 large eggs
:: 1 1/2 cups milk
:: 1/4 cup of orange juice (freshly squeezed and orange drink substitute work as well)
:: 2 tablespoons vanilla extract
:: 1 tablespoon sugar
:: 2 tablespoons sugar (separate from above ingredient)
:: 1/2 teaspoon ground cinnamon
:: 2 tablespoons cinnamon (separate from above ingredient)
:: 1 tablespoons zest of lemon (optional)
:: 1/2 teaspoon nutmeg
:: 1/2 teaspoon salt









Heat skillet over medium heat. Melt vegetable oil or butter in skillet. (I use a large electric skillet)

Mix together the milk, eggs (beaten), orange juice, vanilla extract, nutmeg, salt, lemon zest, 1/2 teaspoon cinnamon and 1 tablespoon sugar.

Dip bread into mixture and then place onto skillet. Each side should only take a few minutes to properly cook.

Mix together 2 tablespoons cinnamon and 2 tables sugar. Sprinkle over bread after placing it on the skillet. Flip bread when ready and sprinkle that side as well.



Toppings: I serve warm with butter and syrup. Bananas, strawberries and cream are also great additions!



Leftovers: I place the leftover pieces of French Toast into a freezer bag and save. They can be removed easily and heated in the microwave.

The Best Homemade Brownies

I love feeding my family.  I especially love giving them yummy desserts!  These delicious homemade brownies are one of our favorites.  If you love rich, moist, thick, chocolatey brownies that must be washed down with a glass of milk - these are it!

What You'll Need!


  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 1/4 cups of white granulated sugar
  • 1 1/4 cups of cocoa powder
  • 1 teaspoon baking powder
  • 1 package of semi-sweet chocolate chips {I buy Kroger brand - I like that they are not so small}
  • 4 eggs {I use 4 large eggs}
  • 2 sticks of butter {margarine is okay - butter is better}
  • 1 1/2 tablespoons vanilla extract


Let's Get Baking!


  1. Melt butter over medium heat in a sauce pan
  2. Just before butter is completely melted - add sugar.  Stir until butter is completely melted and sugar is mixed evenly into the melted butter.
  3. Transfer melted butter and sugar mixture into bowlI use my KitchenAid Mixer
  4. In same bowl, mix together butter/sugar mixture, salt, baking powder, vanilla extract, eggs, cocoa powder and flower.  {I allow the mixer to run for a couple minutes - mixture will be thick}
  5. When all above ingredients are mixed thoroughly - stir in chocolate chips.
  6. IMMEDIATELY pour into greased 13x9 baking pan.  {The longer you wait - the thicker and harder to transfer the mixture}
  7. Bake at 350 for 23 minutes.  Your oven may require a few more minutes.  {I know that is an odd number - but it will continue to cook in the pan for a minute or two once it is removed from the oven.  Overdone brownies are just not yummy!}

Additional {Optional} Ingredients


  • Melt chocolate and shortening together - drizzle over top of brownies
  • Add chopped nuts
  • Sprinkle powdered sugar over top of brownies

These are delicious on their own or served with a side of vanilla ice cream.

I prefer to serve immediately.  I think they are best when they are warm.  So I make them within a few hours of when I intend to serve.  Make sure to keep them in a sealed container so they do not harden.

Apple Pie by My Mother in Law

Prior to tasting the delicious apple pie prepared by my mother in law, I was never a fan of the dish. It was generally dry and bland. Even with a scoop of ice cream placed beside it, I would turn up my nose. Not interested.

Yet, one Thanksgiving dinner…. I was offered the dreaded apple pie. I was a newly wed, and it was being offered by my mother in law. She had spent many hours planning and creating such a beautiful dinner for everyone. I kindly accepted and figured I would gracefully swallow every bite no matter what.

It was juicy! It had flavor! It was heaven!

I present to you, the only apple pie I will currently eat….


Apple Pie

Pie Crust:
2 1/4 cups flour
3/4 tsp salt
3 tbsp milk
3 tbsp sugar
3/4 cup oil

Mix in pie plate with fork until crumbly, Press into shape. Prick bottom.

prior to having streusel topping added
1 tbsp lemon juice

Streusel Topping
1 cup flour
1/2 cup firmly packed brown sugar
1/2 tsp cinnamon

****UPDATE****

My mother in law gave me a few changes/additional tips to this recipe!

She has adjusted temp and baking time!

She bakes at 425 for 10 minutes, then reduces temperature to 350 and bakes an additional 25 minutes.

So a total of only 35 minutes baking.  Try this, I think you'll love it!

White Chocolate and Macadamia Nut Cookies

Ingredients:


•1 cup 2 Sticks Softened Butter
•3/4 cups Granulated Sugar
•3/4 cups Packed Brown Sugar
•2 whole Eggs
•1 teaspoon Vanilla Extract
•2-½ cups All-purpose Flour
•1 teaspoon Baking Soda
•1 teaspoon Salt
•1 cup White Chocolate Chips
•1 cup Chopped Macadamia Nuts

Directions:


{1} Preheat oven to 375 F
{2} Chop nuts
{3} Cream butter and sugars
{4} Mix in eggs and vanilla, followed by dry ingredients
{5} Stir in your nuts and chocolate
{6} Drop rounded tablespoons onto an ungreased baking sheet
{7} Bake for 8-10 minutes or until they start to brown

Snickerdoodle Cookies

Ingredients:


•1 cup Shortening
•1-½ cup Sugar
•2 whole Eggs
•2-¾ cups Flour
•2 teaspoons Cream Of Tartar
•1 teaspoon Soda
•1/2 teaspoon Salt

Cinnamon/Sugar Mixture:

•2 Tablespoons Sugar
•2 teaspoons Cinnamon

Directions:

{1} Mix shortening, sugar and eggs.

{2} Sift flour, cream of tartar, baking soda, and salt.

{3} Add to egg mixture and stir well.

{4} Once it is mixed, chill in the fridge for about 30 minutes.

{5} Roll into a ball about the size of a walnut.

{6} Roll the ball in a cinnamon sugar mixture of 2 tablespoons sugar and 2 teaspoons cinnamon.

{7} Place on an ungreased baking sheet.

{8} Bake at 400 degrees for 8-10 minutes or until lightly brown.

Best Blueberry Muffin

This is by far the best recipe for Blueberry Muffins I have ever tried! Delicious!

Not certain where Dan found this recipe, but it has my mouth watering every time I even think about these muffins.

Best Blueberry Muffins


If buttermilk is unavailable, substitute 3/4 cup plain whole-milk or low-fat yogurt thinned with 1/4 cup milk.

Makes 12 muffins

Lemon-Sugar Topping
1/3 cup sugar (2 1/3 ounces)
1 1/2 teaspoons finely grated zest from 1 lemon



Muffins

2 cups fresh blueberries (about 10 ounces), picked over
1 1/8 cups sugar (8 ounces) plus 1 teaspoon
2 1/2 cups unbleached all-purpose flour (12 1/2 ounces)
2 1/2 teaspoons baking powder
1 teaspoon table salt
2 large eggs
4 tablespoons (1/2 stick) unsalted butter , melted and cooled slightly
1/4 cup vegetable oil
1 cup buttermilk (see note)
1 1/2 teaspoons vanilla extract


{1} FOR THE TOPPING: Stir together sugar and lemon zest in small bowl until combined; set aside.

{2} FOR THE MUFFINS: Adjust oven rack to upper-middle position and heat oven to 425 degrees. Spray standard muffin tin with nonstick cooking spray. Bring 1 cup blueberries and 1 teaspoon sugar to simmer in small saucepan over medium heat. Cook, mashing berries with spoon several times and stirring frequently, until berries have broken down and mixture is thickened and reduced to ¼ cup, about 6 minutes. Transfer to small bowl and cool to room temperature, 10 to 15 minutes.

{3} Whisk flour, baking powder, and salt together in large bowl. Whisk remaining 11/8 cups sugar and eggs together in medium bowl until thick and homogeneous, about 45 seconds. Slowly whisk in butter and oil until combined. Whisk in buttermilk and vanilla until combined. Using rubber spatula, fold egg mixture and remaining cup blueberries into flour mixture until just moistened. (Batter will be very lumpy with few spots of dry flour; do not overmix.)

{4} Use ice cream scoop or large spoon to divide batter equally among prepared muffin cups (batter should completely fill cups and mound slightly). Spoon teaspoon of the cooked berry mixture into center of each mound of batter. Using chopstick or skewer, gently swirl berry filling into batter using figure-eight motion. Sprinkle lemon sugar evenly over muffins.

{5} Bake until muffin tops are golden and just firm, 17 to 19 minutes, rotating muffin tin from front to back halfway through baking time. Cool muffins in muffin tin for 5 minutes, then transfer to wire rack and cool 5 minutes before serving.

Un-Holiday Traditions

This morning as I was preparing our weekly Sunday Cinnamon Rolls, it dawned on me that I have inadvertently started a "tradition" or "routine". Always having cinnamon rolls ready for the family when they awake on Sunday morning. It's a nice little treat that even I look forward to on Sunday.

I thought it would be interesting to know what your "routines" or "traditions" are around your home or maybe ones that you grew up with and really looked forward to.

Maybe next Sunday I'll try making homemade cinnamon rolls.
